1 3/4 cup milk
1/4 vegetable oil
1 3/4 cup all purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1. Heat the skillet over med-high heat. Approximately 375 degrees F.
stir in milk and eggs.
then stir in oil
Stir just until large lumps disappear.
2. Grease the heated skillet. I use butter.
Pour the batter onto the heated greased skillet.
Bubbles will burst on the top. Once they burst and don’t seal back over it is time to flip the pancake. I use a spatula. The second side will take much less time as the first. Cook until golden brown.
and serve immediately. many people top with syrup. you could substitute jam or powdered sugar if you wish.
